Many things have been written about this quirky niche of old Florence, to which people come for the atmosphere and a taste of past times


This is one of the very few local trattorias which has remain true to itself over the years. La Sostanza is better known among the Florentines as Il Troia, which was the founder's nickname.


Famous for its cooking, spartan service and home atmosphere since 1869, this restaurant has only two long marble communal tables, where diners sit elbow-to-elbow with complete strangers.


The menu includes the restaurant signature's dishes, that is, artichoke tortino and butter chicken breast. Seemingly easy recipes, wj=hioch actually very challenging even for a Michelin-starred chef.
